Instructions
Step 1
Adjust oven rack to top position and preheat oven to 425 degrees. Wash and dry produce.
Step 2
Cut potatoes into 1/2-inch thick wedges.
Step 3
Halve, peel, and thinly slice onion.
Step 4
Toss potatoes on a baking sheet with a drizzle of oil and Tbsp Old Bay seasoning. Season lightly with salt and pepper.
Step 5
Roast on top rack until browned and crispy, about 20-25 minutes.
Step 6
While potatoes roast, heat a large drizzle of oil in a medium pan over medium-high heat. Add onion, cook stirring occasionally, until browned and softened, 8-10 minutes.
Step 7
Add 1 Tsp sugar and splash of water; cook until onion is caramelized and jammy, 2-3 minutes more. Season with salt and pepper. Turn off heat; transfer to small bowl.
Step 8
Meanwhile, in a second small bowl, combine mayonnaise, ketchup, mustard, and as much Old Bay as you like. Set aside.
Step 9
Form pork into 2 equal-sized balls; season all over with salt and pepper.
Step 10
Heat a drizzle of oil in pan used for onion over medium-high heat. Once pan is hot, add pork. Firmly flatten each ball with a spatula to create very thin patties. Cook until browned and cooked through, 4-7 minutes per side.
Step 11
In the last 1-2 minutes of cooking, top patties with cheddar, cover pan to melt cheese. Remove from heat.
Step 12
While patties cook, halve and toast buns.
Step 13
Divide buns between plates and fill with patties, caramelized onions, and half the special sauce. Serve burgers with Old Bay fries on the side and remaining special sauce for dipping.
