Step 1
Simmer neck, heart & gizzard covered in salted water for 2-2 1/2 hours.
Add liver for last 30 minutes of simmering.
Turn off and allow to cool.
When cool enough, cut up into small pieces and throw bones away.
Boil eggs.
Heat broth on low, add boiled eggs plus cooked, chopped giblets. To thicken, put flour in measuring cup and add hot water until it becomes a thick slurry. Add to the broth as needed to thicken making sure the broth is not so hot it cooks in the flour into dough when added. Stir to combine and simmer to continue to thicken. Gravy will thicken more once it begins to cool after removing heat.
