Step 1
Bring one 15-ounce can Guinness beer and sugar to a simmer in a saucepan over low heat and cook until syrupy; about 40 minutes. Whisk in the 1 and 1/2 tablespoons of diced cold butter until completely dissolved. Drizzle the Guinness caramel over vanilla bean ice cream and serve with shortbread cookies.
