Fast and easy pumpkin pie !

Winter time is slowly coming and nothing is better than hot cocoa and a slice of homemade pumpkin pie. Sharing my really fast and easy recipe for the holiday season ♥️

Instructions

Step 1
1. Clean, peel and cut the pumpkin and the sweet potato in big chunks
Step 2
2. Place them on a stove and bake for 30mn at 180°C
Step 3
3. Check with a knife too see if they are soft. Once out of the oven, smash and mix the pumpkin and sweet potato. Pour the mix into a bowl and rest until room temp.
Step 4
4. Add the egg. Mix. Add the sour cream, mix. Add the sugars, cinnamon and ginger, and mix again.
Step 5
5. Pour the mix into the shortcrust pastry and bake for 20mn at 180°C, then 20mn at 100°C. Check with a knife to see if it's all good. Let it rest at room temp then put in the fridge for 2 hours.
