Instructions
Step 1
Place butternut squash in baking tray lined with water
Step 2
Roast squash for 40 minutes at 335F until soft with fork pressed in
Step 3
Remove squash from oven and let it cool
Step 4
Discard squash skin and blend squash and 2 cups of water
Step 5
In a saucepan combine all ingredients
Step 6
Bring to a boil and then reduce to simmer for 20-30 minutes.
Step 7
Chill and then serve, or serve warm
