Instructions

Step 1
In a large stock pot, cook celery, onion, and garlic in butter or oil until translucent and fragrant.

Add the 4 Tbsp of butter to the pot and melt. Whisk in the flour until combined with the melted butter (this is the roux that thickens the chowder). Add the stock and whisk until there are no clumps.

Step 3
Add potatoes and bring to a boil, then turn down the heat to a simmer. Add the clams and bacon and simmer uncovered for 15-20 min or until the potatoes are fork soft. If you want your chowder to be thicker, just whisk equal parts melted butter and flour in another pan, whisk it into the chowder, bring to a boil, and then simmer for a couple minutes. You can repeat this until it is the consistency you want.
Step 4
Turn off the heat and stir in the half n half. Season with salt, white pepper, and apple cider vinegar. Serve hot and enjoy!
