Instructions

Step 1
cook off pork loin (oil, salt, pepper, garlic) 350* for about an hour or until fully cooked
Step 2
peel sweet potatoes. dice and par boil until slightly tender
Step 3
chop yellow onion to match the size of sweet potato pieces
Step 4
once your potatoes are cooked drain all the liquid from the pot
Step 5
dice up cooked pork loin
Step 6
toss together dice pork, onion, and potatoes. add seasonings listed above.
Step 7
pour mixture into a baking dish and add knobs of butter on top.
Step 8
bake 400* for 30 minutes (covered)
Step 9
uncover and bake for an additional 25-30 minutes until top is golden brown
Step 10
scoop and serve by itself or with a sauce of your choice. (see apple cranberry chutney recipe)
