Crockpot BBQ Pulled Chicken w/ Mac & Cheese

For even distribution of meals among meal containers, you can either estimate the portions, or weigh the entire batch, and divide that number by your number of meal containers. This recipe makes six meals, so it would be the total weight, divided by six. That will be your portion size per meal.
Refrigeration instructions - For maximum freshness, store in air tight containers and refrigerate for no longer than three days.
Freezing instructions - If storing for meal prep, place into freezer safe meal containers, and place in the freezer. Take a meal out of the freezer and place it in the refrigerator the night before to let the meal thaw out.

Step 1
1. In your crockpot, add about 1/4 of your BBQ sauce to coat the bottom of the crockpot. Place your three chicken breasts into the pot, then pour the remainder of your BBQ sauce over them.

2.. Cover with the lid and cook on low for 4 hours, or high for 2 hours. Ensure the chicken reaches an internal temperature of at least 165°F.

3. When the chicken is done, shred with the back of two forks. Raise heat on remaining bbq sauce to a low boil, cook until thickened. Mix with shredded chicken

4. Cook your pasta according to the instructions on the package, strain, set aside, and keep warm.
Step 5
5. For the cheese sauce, place a medium size sauce pan over medium heat, and add in your milk and butter. Cook this until the butter melts completely.
Step 6
6. Once the butter is melted, add in all of your dry ingredients (flour, onion powder, garlic powder, ranch seasoning, salt, pepper, paprika, and cayenne). Mix well.
Step 7
7. When the sauce is thick enough to coat the back of a spoon, add in all of your cheese and stir to melt. Remove the sauce pan from the heat as soon as the cheese is melted. Do not overcook. Pour over your pasta immediately and stir together.
Step 8
8. Divide evenly among six meal containers.
Approx. 3.5-4 oz of chicken and 10 oz of macaroni
