Step 1
Pre-heat the oven to about 350 degrees (180 C).

Bring a pot of salted water to a boil.

Add mushrooms and boil for two minutes.

Drain the mushrooms and pat dry then rough chop. Set aside.

Prepare filling

Blend spices together then combine with mushrooms, oil and about 1 cup of grated cheese. For a cheesier filling, add more cheese. Set additional cheese aside for later.

Lightly beat an egg.

Grease a muffin tin well and line 6-8 cups with thin pastry, reserving enough crust to form top crusts for each cup.

Split the filling between each cup of pastry and top with additional cheese.

Brush beaten egg along the edge of each pastry cup, then cover with top crusts using a fork to crimp the edges or pinching shut.

Use a knife to cut two small slices crosswise in the center of each pasty. Brush entire lid with the egg wash.

Bake in a 350/180 oven for 15-20 minutes or until the crust is a golden brown. Remove from the oven and let cool until the pasties can be removed easily from the tin. Eat warm or cold.
