Apple & Mint Slaw with Walnuts & Mustard Cider Dressing | Serves 2

This colourful slaw is super-charged in every way. Adding apple to our ready-to-go slaw mix gives a hint of sweetness, while the mustard cider dressing adds flavour and softens everything up. Toasted walnuts make the perfect crunchy finish.

Instructions

Step 1
Thinly slice the apple (unpeeled) into half-moons. Pick and thinly slice the mint leaves. Roughly chop the walnuts.
Step 2
Heat a medium frying pan over a medium-high heat. Add the walnuts and toast, tossing, until golden, 3-4 minutes.
Step 3
In a large bowl, add the apple, mint, slaw mix and mustard cider dressing. Toss to combine. Season with salt and pepper to taste.
Step 4
Divide the apple and mint slaw between plates. Top with the toasted walnuts.
