Instructions

Step 1
Preheat oven to 375

Sift dry ingredients; stir in carrots and pecans.
Step 3
Cream oil and sugar for 3 minutes in a large bowl.
Step 4
Add eggs one at a time, beating 1-2 minutes after each addition.
Step 5
Add flour mixture and vanilla to creamed mixture.
Step 6
Pour batter into three 9-inch pans or two 12-inch pans.
Step 7
Bake at 375 degrees for 45 minutes to 1 hour.
Step 8
Cool completely before frosting with cream cheese frosting
