Instructions
Step 1
Break garlic clove with the back of a knife (this way it will release more flavour when cooking).
Step 2
In a pan over medium-low heat, add a drizzle of olive oil and garlic.
Step 3
Add rice and let it toast for a couple of minutes, stirring occasionally.
Step 4
Add vegetable stock little by little and after 90 seconds, add tomato passata as well.
Step 5
Lower the heat and let your rice cook for about 15/18 mins or until fully cooked.
Step 6
Turn off the heat, add chopped mozzarella, butter and Parmigiano. Give a nice stir to combine all the flavours together and melt the cheese.
Step 7
Serve with some fresh basil leaves on top.
