Keto coffee caramel coconut flan
This is a keto flan recipe that uses coconut milk and replace sugar with your low carb sweetener of choice. I used Allulose granular sugar.
I mixed coffee with Allulose to make coffee flavored caramel, but feel free to forgo the coffee.

For the coffee caramel
Instructions
Step 1
Whisk eggs together
Step 2
Combine coconut milk and sugar, bring to a simmer. Let cool
Step 3
Mix together with eggs and vanilla
Step 4
Put the remikin in a hot water bath and bake it in the oven at 300 F for 40 minutes
Step 5
Take it out of the oven. If you sway the cup, the top of the flan should jiggle. Let it sit until it cools to room temperature
Step 6
Refrigerate overnight
For the caramel
Step 7
Dissolve the coffee in water
Step 8
Mix it with the sugar and stir on low heat until caramelized
Step 9
Divide the mixture into the remnikin evenly. Wait for them to cool and harden before adding in the flan mixture.
