Instructions
Step 1
1. Finely chop apricots and pineapple in a food processor(The apricots and pineapple are hard to chop so do alittle at a time).
Step 2
2. Combine the chopped apricots and pineapple with the sweetened condensed milk, chopped cherries, chopped macadamia nuts and coconut in a large bowl. (It's easier to mix with your hands or a rubber spatula)
Step 3
3. Pour sugar in another bowl and line a baking sheet or two with wax paper. Coat hands with butter/margerine ( you may need mkre than 2 tbsp.) and shape into walnut sized or bite sized balls. (You may have to recoat your hands in butter multiple times to keep the mixture from sticking to your hands.)
Step 4
4. Place the balls into the bowl of sugar and coat them evenly. Then place the balls on the baking sheet.
Step 5
5. After all the balls are rolled in sugar and placed on the cookie sheets. Place them in the refrigerator overnight to let the flavors meld together. (They taste better after a couple days!)
