Instructions
Step 1
Score the skin of the duck (do not penetrate the meat
Step 2
Cover duck with salt, and rub some under the skin between meat and skin
Step 3
Let sit overnight in the refrigerator
Step 4
Set grill to 180 degrees Fahrenheit
Step 5
Smoke duck for 8 hours or until internal temperature is 160 degrees Fahrenheit. If under 6 hours temperature must reach 165 degrees Fahrenheit.
Step 6
Let duck cool before broiling skin to not overcook meat
Step 7
Puree all ingredients for sauce together and brush over duck
Step 8
Broil until skin is crispy
