Instructions
Step 1
In a bowl, mix together the sugar and the cornstarch.

Add the sugar/corn starch mix, salt, milk, and half and half to a medium pot. If you have a double boiler that will hold everything, use that instead.

Step 3
When the mixture starts to bubble, add the chocolate.

Bring the mixture to a boil.

Stirring constantly, let the mixture boil for ~1 minute. It will start to thicken when it's ready.

Remove the mixture from the heat for a moment.

Take a spoonful of the mixture and slowly mix it into the egg yolks to temper them.

Mix the egg yolks into the chocolate mixture.

Add vanilla and stir until well blended.

Return the pot to fire and bring to a low boil.

Stirring constantly, cook for ~2 minutes.

Remove filling from the heat.

Pour into prepared pie shell.

This works well by itself but pairs wonderfully with a fresh whipped cream topping. If you aren't going to add whipped cream, place a layer of plastic wrap over the top after it has cooled slightly to prevent a skin from forming.

This also pairs well with a meringue topping. It's best to add the meringue before cooling the pie. Toast the top just before serving.
