1 poundbaby yukon gold potatoes
halved lengthwise and score

6 tablespoonssalted butter
melted

¼ cupfresh garlic
minced

½ cupparmesan grated

1 tablespoonfresh rosemary
finely chopped

⅓ teaspoonKosher salt
plus more for the tops of potatoes I use Diamond Kosher

¼ teaspoonblack pepper
freshly ground, plus more for the tops of potatoes

1 teaspoonbutter
melted, to brush the tops of potatoes just before roasting
Instructions
Step 1
Preheat oven to 425°F
Step 2
Add melted butter, garlic, parmesan, and rosemary to a bowl and stir to combine.
Step 3
Pour garlic parmesan mixture into a baking dish then add potatoes, skin-side up.
Step 4
Brush the tops of potatoes with 1 teaspoon of butter, and season to tatte with kosher salt and black pepper.
Step 5
Roast for 40-45 minutes or until bottoms are crispy. Enjoy immediately.
