1. Make the dough:

•Add all the ingredients, except butter, to the bowl of your stand mixer. Knead on low speed for 10 minutes until the dough comes together

•Slowly add the butter, one cube at a time.

•Once all the butter is added, knead for 10-20 more minutes at low-medium speed until the dough passes the window pane test

•Proof for 60-90 minutes until doubled in size.

Once doubled, weigh the entire batch of dough and divide the weight by 20. ( 20 is the serving size of the original recipe)

Divide the dough into 20 equal pieces using a bench scraper and roll into balls.

Flatten each dough ball and add cheese to the center.

Wrap the dough around the cheese and pinch to seal.

Arrange bread bites in a round 12-inch/30 cm baking pan, seam-side down.

Cover and proof for about 30 minutes until nice and puffy looking.

Preheat oven to 350F/180C.

Meanwhile, make the garlic butter:

Add butter and garlic to a pot and heat up until the butter is melted.
