Step 1
Begin with removing the stalk from the cauliflower and chop into small florets.
Step 2
Place in a baking tray and cover generously with olive oil. Season with salt & pepper and paprika. Place in an oven at 200c/390f for 25-30 minutes.
Step 3
Grate the cheddar. Then add the chicken stock cube to a bowl and pour in 100ml of hot water and stir until fully dissolved.
Step 4
Get a pan on a medium-high heat and add the butter. Once it's melted, add the flour and stir well for about a minute. Add the chicken stock and keep stirring. Then slowly add the milk, bit by bit, whilst continuing to stir.
Step 5
Once you have a nice thick, smooth sauce season with salt and pepper and add the dried thyme. Stir well and then turn the heat off. Add the cheese and stir gently until melted through.
Step 6
Remove the cauliflower from the oven (it should be slightly browned and nicely charred). Either in the same oven tray or a separate oven dish pour over the cheese sauce. Top with more grated cheddar and place back in the oven for 15 minutes or until golden brown on top.
Step 7
Leave to rest for 15 minutes before serving.
