Creamy Chicken Gnocchi and Spinach Skillet
One skillet meals are my jam. When you’re able to make and serve dinner in the same skillet; from the stovetop to the table… well, it just doesn’t get any better than that.
This Chicken Gnocchi dish is so simple, comforting and satisfying. It’s creamy, dreamy, rich and packed full of tender chicken and spinach and all served on fluffy little pillows of gnocchi.

Creamy Chicken Gnocchi and Spinach Skillet

recipe
2 tbls olive oil
4 boneless, skinless chicken breasts, pounded to an even 1/2” thickness
1 small onion chopped
3 garlic cloves chopped
1/2 cup chicken broth or white wine
3 large handfuls baby spinach
1/2 tsp kosher salt
1/2 tsp freshly ground black pepper
1/2 tsp dried thyme
Pinch chili flakes
2 cups heavy cream
1 pound fresh, shelf-stable, or frozen potato gnocchi
1/4 cup fresh parsley leaves
Season chicken breast with salt and pepper.
Heat the olive oil in a skillet over medium-high heat. Add the chicken and sear until browned, 5 to 7 minutes per side. Transfer the chicken to a plate.
Add the onion and garlic to the skillet and sauté until softened, about 1 minute. Add the broth or wine and stir up the bits at the bottom of the pan and let reduce by half. Add the cream and gnocchi, salt, pepper, thyme and chili flakes and bring to a simmer for about 2 minutes.
Stir in the spinach and nestle the chicken on top. Continue to simmer for 2 to 3 minutes more. Garnish with chopped fresh parsley.
