This is an heirloom recipe from a restaurant on the Kentucky River near Lexington (out of business since the late 1990s). It's a quick fix for a party, one batch goes a long way, and it packs a great flavor punch for how easy it is!
For a creamier cheese, use more beer. The higher-quality beer and cheese you use, the more flavorful the taste and the better (less greasy) the consistency.

Step 1
Set out the beer to let it reach room temperature.
Step 2
Add cheese chunks to a food processor and mix.
Step 3
Once they're crumbly, add in the spices and begin dripping in the beer, alternating with mixing, until desired consistency has been reached.
Step 4
Refrigerate for at least half an hour before serving.
Step 5
Serve with chips, crackers, chopped vegetables, soft or crispy pretzels, warm bread, ...
