Rich Non-Dairy Peppermint Hot Chocolate

A deliciously rich, thick non-dairy hot chocolate perfect for a chilly day and the holidays.
This peppermint chocolate is completely dairy-free. I use a bit of corn starch to give a nice velvety thick texture similar to Mexican or Italian hot chocolate.
And I didn't stop there I'm using a dairy-free heavy whipping cream topped with crushed peppermint candies. Although I am not vegan, I am lactose intolerant but I don't really like the coconut or aquafaba whipped topping options available. The silk dairy-free heavy cream is decent but I also tried the Whole Foods 365 Oat-Based Whipped Topping and THAT, that was delicious and worth a try to dairy and non-dairy lovers.

Ingredients

12 ozOat Milk
1.5 TbspCocoa Powder
unsweetened
2 TbspAllulose
salt
¼ tsppeppermint extract
1.5 TspCorn Starch
1.5 TspWater
cold
Dairy Free Whip Topping
¼ cupDairy Free heavy whipping cream
2 TbspAllulose
2peppermint candies

Instructions
Step 1
In a pot (with the heat off) add oat milk, cocoa powder, sweetener of choice, and salt. Stir and turn the heat to medium-low
Step 2
When the hot chocolate is warm before it boils add peppermint extract.
Step 3
Mix cold water and corn starch and add to hot chocolate when it starts to simmer
Step 4
Bring to a boil to allow the hot chocolate to thickness and it's done.
Step 5
Top with whip topping of choice and crushed peppermint candies
