Instructions
Step 1
Combine vinegar, lemon juice, kosher salt and sugar and divide in half.
Step 2
Add 1/2 c water to half of this mixture and cook fish in it for 20 min.
Step 3
Cool fish and discard liquid once cooled.
Step 4
Blend mayo with 1/2 c water and remaining mixture.
Step 5
Slice lg Spanish onion and purple onion.
Step 6
Place pickling spice in an herb bag.
Step 7
Place fish in pan. Top with onions, bay leaves and herb bag.
Step 8
Pour marinade over fish.
Step 9
Best if done at least a week in advance.
