Instructions

Step 1
Slice chorizo, dice onion and chop sweet potato into small cubes
Step 2
In a hot pan add chorizo, brown. Then remove form pan.
Step 3
In same pan, add onion and garlic. Brown in pan. The add the sweet potato. Brown.
Step 4
Add chorizo back into pan. Add risotto rice and brown. Then add chicken stock.
Step 5
Cook.
Step 6
Before serving add spinach and wilt, then add cheese. Serve
