An easy supper dish that can be enjoyed by the whole family. Use any canned beans you have in the cupboard and make a vegetarian version using non-meat sausages.

Instructions

Step 1
Heat the oven and cook the pork sausages according to pack instructions. This can be done while preparing the other ingredients.
Step 2
Heat the oil in a large frying pan and then fry the sliced onion for 3-4 minutes.
Step 3
Add the minced garlic and chopped celery, stir and fry together for a further minute.
Step 4
Fill a saucepan with water and bring to the boil. Add the diced sweet potatoes and carrots and put the lid on then simmer for 10 minutes, then drain and keep in the saucepan with the lid on and the heat off.
Step 5
Add chopped tomatoes and the tomato puree to the frying pan mixture and turn to a low heat.
Step 6
Add the can of butter beans to the frying pan and stir together then transfer all of the contents of the frying pan to an ovenproof dish or tray.
Step 7
Add the sweet potatoes and the cooked sausages to the tray or ovenproof dish and leave to cook together in the oven on a low heat for 30 minutes.
Step 8
Serve with the parsley scattered on top of the baked dish and some crusty bread to make a filling supper.
