I use

2 tspxanthan gum
omit if flour has xanthan gum in it some 1 to 1s and all purpose do

½ cupconfectioners sugar

½ tspsalt

Step 1
I measure out the weights and sift 3 times in a bowl 748 g flour 0g xanthan gum 130 g confectioners sugar 24g baking powder 4g salt 32 g corn starch or potato starch or a mix is fine

In a mixing bowl whisk in soft butter and sift 100g granulated sugar, eggs and egg whites, add vanilla and almond extract, add maple syrup mix well...

Put dough blade on mixer and sift for the fourth time the dry ingredients to the wet not over mixing.

Wrap in wax paper and refrigerate 2 to 3 hours then roll out and cut to desired shape
Baking

Preheat oven to 375

Step 6
Bake 6 to 7 minutes not letting the cookies brown . On the bottom a little is ok
