BLACK BEANS AND CHORIZO WITH CHICKEN

This is a really hearty and filling post-workout meal. It tastes pretty good cold or reheated the next day too, so is perfect for a lunch box.

Ingredients
1 servings
½ Tbspcoconut oil
30gcooking chorizo
chopped into 1cm pieces
coriander
stalks and leaves separated
2spring onions
finely sliced
1 x 200gskinless chicken breast fillet
sliced into 1cm thick strips
150gblack beans
tinned, drained and rinsed
75mlchicken stock
1orange
juice of, to serve

such as spinach, kale, broccoli, mange tout or green beans, to serve
Instructions
Step 1
Melt the coconut oil in a wok or large frying pan over a medium to high heat. Chuck in the chorizo pieces and stir-fry for 1 minute. Roughly chop the coriander stalks and add to the pan along with the spring onions and chicken strips, then stir-fry the whole lot together for 2 minutes.
Step 2
Tip in the black beans and the chicken stock. Bring to the boil and simmer for 2 minutes, or until you are sure the chicken is fully cooked and the beans are warmed through. Check that the chicken is cooked by slicing into one of the larger pieces to make sure the meat is white all the way through, with no raw pink bits left.
Step 3
Serve up your dish sprinkled with the chopped coriander leaves and a squeeze of orange juice.
