Instructions

Step 1
Roll half of pastry to 1/8” thickness on a lightly floured surface. Place in a 9” pie plate and set aside.
Step 2
Combine apples and lemon juice in a large bowl. Separately, combine sugars, flour, cornstarch, cinnamon, and nutmeg.
Step 3
Spoon dry ingredient mixture over apple mixture, tossing gently. Spoon spiced apples into pastry shell, filling evenly, and dot with butter.
Step 4
Roll remaining pastry to 1/8” thickness and transfer to top of pie. Trim excess pastry along edges, fold edges under and flute. Cut steam slits in top pie crust.
Step 5
Cover edges of pastry with aluminum foil to prevent excess browning. Bake at 450F for 15 minutes. Reduce heat to 350F and bake an additional 35 minutes.
