Instructions
The Crust
Step 1
Crush cookies into small pieces (most easily done with a mixer).
Step 2
Mix the cookies with melted butter and press it on the base and walls of your container.
Step 3
Bake in a 180°C oven for 10min and let cool afterwards.
The Filling
Step 4
Whisk egg yolks with an electric beater for 1min.
Step 5
Add condensed milk and whisk for 3min.
Step 6
Grate limes finely to get zest and then squeeze out the juice. Add both the zest and juice to mixture and whisk for 3min.
Step 7
Pour filling into base and bake at 180°C again, this time for 15min. Let it cool.
Optional
Step 8
Beat egg whites and salt until hardened and peaks form.
Step 9
Once hard, add icing sugar and continue mixing for a bit.
Step 10
Spread on top of pie and put back into oven for 10-15min at 190°C.
Step 11
Sprinkle some leftover lime zest atop to decorate.
