Sausage casserole - slow cooked

A recipe I made up after I went to the cupboard and found that I had run out of packet sauce mixes. Turned out right tasty.

8pork sausages
1onion
medium sliced
500mlwater
boiling
2beef stock cubes
0.5 punnetmushrooms
sliced
3baby courgettes
or carrots, sliced
1red pepper
sliced
2cloves garlic
crushed
6new potatoes
whole or halved
1 sprigfresh thyme
pepper
soy sauce
1can mixed beans in tomato sauce
2 Tbstomato ketchup
1 Tbspassata
1 Tbssunflower oil
Instructions
Step 1
Heat the slow cooker on high
Step 2
Peel and slice the onion. Soften in the heated oil and then add the sausages to lightly brown. Add to the slow cooker and cover.
Step 3
Slice the courgettes, red pepper, mushrooms and add to the low cooker along with 500ml boiling water and 2 beef stock cubes. Add the baby New Potatoes. These can be fresh and if so wash and peel. Keep the smallest ones whole and halve the bigger ones or you can buy a small tin of peeled spuds in water. Crush and add 2 garlic cloves, 1 sprig of fresh thyme, pepper, the canned beans with sauce, 2 tbs ketchup, 1 tbs passata and a splash or two of soy sauce (Kikkoman preferred for milder and sweeter taste)
Step 4
Close the lid of the slow cooker and cook on high for 4 hours or low for 8. Serve with whatever you want it with. Could be with creamy mashed potatoes (if so then leave the New Potatoes out of the mix and replace with another root vegetable). Is also good with rice (either Basmati or American Long Grain) or maybe just some crusty bread and butter.
