line 2 large baking sheets with baking paper and draw 3 rectangles on the paper

preheat oven to 140oC

put the egg whites into a large clean bowl and whisk until stiff but not dry

gradually add 300g of the sugar, whisking consistantly

use 1/3 of the meringue mixture to make each rectangle

bake for 1 1/4-1 1/2 hours

leave the meringue in the oven with it turned off for as long as possible, preferably overnight
to make the filling

whisk the cream and remaining sugar together until the cream just holds its shape
