This no-bake recipe is super easy and tasty. What makes this no-bake lemon cake so good? The texture! It's the perfect level of flavorful. This lemon cake is on par. Seriously! But the best part about it is that it is more delicious than those famous no-bake lemon cakes, and it's made with healthy ingredients. It is gluten-free, vegan, and has no refined sugar added - to good to be true!

Instructions

Step 1
Put pecans in food processor and pulse 5 times.
Step 2
Add the rest of the ingredients and process until you get a sticky dough. If you need more water, add slowly.
Step 3
Put the base in a round or square tray and spread it with your hands until it is evenly distributed throughout the space.
Step 4
Take it to the fridge.
Step 5
Serve with lemon zest on top.
Step 6
Wash and clean the cashews that you left to soak very well. It removes the water completely.
Step 7
Add all the ingredients to the processor and mix until you get a liquid and creamy dough.
Step 8
Add this filling to the base and refrigerate for at least 2 hours.
Step 9
Garnish with more lemon zest.
