Instructions
Step 1
Heat olive oil in a large pot, add onions and cook for 5-7 mins over a low heat until soft but not coloured. Mix in garlic for 1-2 mins.
Step 2
Add in courgettes, carrots, celery, season well and cook for 7-10 mins over a low heat.
Step 3
Pour in stock and simmer over low heat for 10 mins.
Step 4
Break up spaghetti and cook on high heat until cooked.
Step 5
Mix in chicken and add flat leaf parsley.
Step 6
Serve with parmesan cheese, chilli oil and buttered crispy bread.
