Eggplant rolls with walnut filling are found throughout Georgia. The rolls are served as an appetizer for dinner party, aka supra. Small eggplants are sliced lengthwise, seasoned, and fried before being spread with a walnut paste and rolled or folded. They are vegan and gluten-free. This version was created for Brama restaurant by Lyukum Cooking Lab. The eggplant slices are grilled and stuffed with a smooth sauce made with local pecans since they are of higher quality in Texas than walnuts. It was a hit.

Step 1
Preheat the grill to Sear. Slice eggplants alongside 1/3" thick. Spray/brush with oil, season, and grill flipping slices to make grill marks.
Step 2
In a blender jar, combine the rest of ingredients and blend until smooth.
Step 3
Spread a thin layer of the walnut or pecan sauce on every slice of eggplant and roll.
Step 4
Serve cold or room temperature, garnished with fresh cilantro leaves and pomegranate seeds.
