Instructions
Step 1

Start with 400 grams of flour. I usually mix 250 grams of 00 flour and 150 grams of semolina. However, using all purpose flour is fine too! Put the flour in a bowl or on your countertop, and make a well in the middle.
Step 2

Pour 4 eggs in the well in the flour. Some people add a teaspoon of salt at this point, but I don’t because I add a lot of salt to the water when I cook my pasta. You can also add a spoonful of olive oil if you want a richer taste.
Step 3

Use a fork to mix the eggs and slowly incorporate the flour. Keep incorporating more and more of the flour.
Step 4

At a certain point it will be difficult to mix, and you will need to use a dough scraper, a spatula, or your hands to continue mixing the ingredients.
Step 5

Once it is well mixed, use your hands to form a ball of dough. If it is very crumbly and not coming together, add a spoonful of water. If it is slimy and sticking to your hands, sprinkle on a little more flour.
Step 6

Knead your dough for about 5-10 minutes, until if feels smooth. Push your finger in the dough slightly snd it should bounce back. Wrap the dough and let it rest for at least an hour.
Step 7

After it has rested, cut your dough into quarters and use one piece at a time. Leave the other pieces wrapped. Use a rolling pin or large bottle (or pasta machine if you have one!) to roll the dough into a loose rectangle shape. It should be a few millimeters thick. Start folding the ends towards the middle.
Step 8

Keep folding until the two ends meet each other in the middle.
Step 9

Use a knife to cut the pasta into strips, however thick you want them.
Step 10

Unroll the strips, and you have pasta!
Step 11

You can cook the pasta immediately in a pot of boiling, well-salted water (should taste like ocean water). This pasta should cook faster than boxed pasta. Depending on how thick you rolled it, it should cook in 3-6 minutes. You can also dry your pasta, leave it in the fridge, or freeze it for later!
