Christmas Cake
Takes like Christmas morning. Technically a terrine, this got its name from the windmill cookies adding delicious flavor.
Have not converted to dairy free yet...

Step 1
Blend all ingredients in a food processor until smooth.

Melt & cool semisweet chocolate.
Step 3
Line a loaf pan with plastic wrap.
Step 4
Place cream in a bowl & whip until stiff peaks form.
Step 5
Using spatula, fold in cooled chocolate.
Step 6
Place rum in a shallow dish. Lightly dip cookies into rum & arrange on bottom of pan.
Step 7
Make more layers in the following order:

1/2 chocolate cream

cookies dipped in rum
Step 10
chestnut puree
Step 11
cookies dipped in rum

other 1/2 chocolate cream
Step 13
cookies dipped in rum
Step 14
Cover with plastic wrap & let chill 8 hrs or overnight.
Step 15
Turn the terrine out onto a large serving dish.
Step 16
Sift confectioner's sugar over top.
