Instructions
Step 1
Combine the water, brown sugar and yeast in a bowl or kitchen aid. Mix and let sit for 5 minutes.
Step 2
Add the beer, melted butter, salt and flour to the bowl and mix with a dough hook on a low speed until combined. Slowly increase the speed and continue kneading until the dough begins to pull away from the sides of the bowl. It will take 3 to 4 minutes.
Step 3
If the dough appears too wet, add additional flour, 1 tablespoon at a time.
Step 4
Remove the dough from the bowl, place on a flat surface and knead into a ball with your hands. Coat a large bowl with a light layer of neutral oil, add the dough and rub some more oil on the surface of the dough. Cover with a towel and let it rise for 1 hour. It should double in size.
Step 5
Preheat the oven to 425 degrees and bring a large pot of water to a boil.
Step 6
Remove the dough from the bowl and place on a flat surface and divide it into 8 equal pieces. Roll the dough into long strips. Then dry your hotdogs off and wrap the dough around the dogs, tucking the ends in.
Step 7
Add the baking soda to the boiling water. Boil the pretzels in the water solution for 30 seconds, splashing the tops with the water as the pretzels soak. Remove the pretzels from the water and place them on a baking sheet.
Step 8
Brush the tops with egg wash and season with coarse salt. Bake for 15-20 minutes or until pretzels are golden brown.
Step 9
Remove from the oven and enjoy with your favorite dipping sauce! I prefer mustard or cheese!
