Instructions

Step 1
Add yeast to warm water and let bloom (about 5 minutes)
Step 2
Add flour, salt, activated yeast, and room temp water to mixing bowl. Stir to combine, turn out onto floured cutting board and rest for 3-4 minutes
Step 3
Knead with 1 hand until dough becomes elastic (5-10 minutes)
Step 4
Return to (cleaned) bowl and let rise at 70 degrees for 3-5 hours.
Step 5
Turn the dough back out and deflate. Knead by folding the corners in on itself a few times. Return to bowl for second rise, about 90 minutes.
Step 6
Turn the dough out and knead like last time. Cut the dough into the shapes/sizes you need. Cover for the 3rd rise, about 90 minutes.
Step 7
Flip bread over onto baking sheet, score, spritz with water and bake at 450 for 25 minutes. Spritz with water at 3, 6, and 9 minutes in the oven.
Step 8
Remove from oven and place on cooling rack for 2 hours.
