Caramelized Pearl Onions with Red Wine

Instructions

Step 1
Line 2 sheet pans with paper towels and spread onions out to pat dry well
Step 2
Heat oil and butter in a large non-stick skillet over moderately high heat until hot but not smoking and cook onions and rosemary, stirring until golden brown, about 5 minutes
Step 3
Add red wine and simmer, stirring until reduced to 1 table spoon
Step 4
Stir in brown sugar and balsamic vinegar and cook over moderate heat, stirring until sugar is melted, about 2 minutes
Step 5
Transfer onions to a bowl and season with salt and pepper to taste
