Apple-Bulgur stuffing

BULGUR Although a stranger to some, bulgur is simply wheat that has been parboiled, dried, and cracked. It's another food that has more than its share of good stuff - such as protein, niacin, and iron - and none of the bad stuff - such as fat and sodium. The bottom line is that bulgur is ideal for a range of healthy diets - whether they are designed to benefit heart, digestion, diabetes, or even body weight. Would you believe bulgur is for breakfast, too? If you have some prepared bulgur from the night before, you can make a quick breakfast. Scoop a serving into a microwave-safe bowl, cover and microwave on full power until heated through - about a minute. Top with vanilla yogurt and enjoy!

Instructions

Step 1
In a nonstick skillet, heat oil over medium-high heat. Add shallots and saute until soft, about 4 minutes.
Step 2
Add applesauce and milk and simmer, stirring frequently , until the mixture has thickened and is reduced by half, about 5 minutes.
Step 3
Remove the skillet from the heat and add thyme, nutmeg, and bulgur.
Step 4
Use to stuff a roasting chicken, four boneless breasts, four fish fillets or four Cornish game hens.
