Swedish Cocktail Meatballs

3 steps
Prep:7minCook:8min
Serving size is 3 meatballs. 2 WW points. Serve as appetizer or mini meal. Onion is optional if you or someone you know is allergic(like my mother is). Tip: Wet your hands frequently with cold water while you're forming the meatballs; this will keep the mixture from sticking to your hands and help you quickly roll smooth, even meatballs.

Instructions

Step 1
Combine all the ingredients except the water and oil in a food processor and pulse until well mixed. With the motor running, pour the water into the feed tube and process until fairly smooth.
Step 2
Scrape the mixture onto a plate. Wet your hands and form 18 meatballs, each about 3/4 inch in diameter.
Step 3
Heat the oil in a large nonstick skillet over medium-high heat. Add the meatballs and cook, shaking the pan frequently, until browned and cooked through, 6-7 minutes. Skewer the meatballs with 18 toothpicks or cocktails picks and serve.
