Zucchini Tuna Melt

Instructions

Step 1
1. Preheat oven to 400°F/200°C/Gas 6.
Step 2
2. Cut zucchini in half lengthwise. Use a spoon to scrape out the center. Discard scrapings.

3. Place the zucchini halves cut-side up on a lined baking sheet. Rub with olive oil and season with salt and pepper.
Step 4
4. Transfer zucchini to oven and bake for 10-15 minutes, or until a fork can pierce them easily. Be careful not to overcook, as zucchini may become soggy.

5. Meanwhile, mix together onion, tuna, mayonnaise, Dijon mustard, lemon juice and dill in a bowl. Season with salt and pepper to your liking.

6. Spoon the tuna mixture into the zucchini boats with tuna mixture, mounding it until all the filling is used.
Step 7
7. Top boats with cheddar cheese and return to oven for another 5-7 minutes, or until cheese is melted.
Step 8
8. Allow to cool before storing in meal prep container.
Step 9
9. To reheat, remove lid and place in microwave on high for 2-3 minute increments until hot throughout.
