Brown Butter Chocolate Chip Cookies with Homemade Toffee

Instructions

Step 1
Start by making the toffee. Line a baking sheet with parchment paper. Then heat 1/2 cup butter, 1/2 cup sugar, 1/4 tsp vanilla, and pinch of salt over medium heat until melted. Use a heavy bottomed pan because a flimsy pan won’t heat the toffee evenly. Once the butter is melted raise the heat slightly and stir constantly for 4-5 minutes until the mixture has turned the color of peanut butter. It burns quickly, so immediately pour it onto the baking sheet and let it cook.
Step 2
Meanwhile, make the brown butter. Melt 1 cup butter over medium heat. Once it’s melted, continue cooking for several minutes as it bubbles up, stirring occasionally. The bubble should start to subside slightly and the color will change to golden. You will notice small brown bits on the bottom of the pan. Immediately remove from heat and pour into a heat safe bowl, making sure to scrape in the brown bits. Let cool for about 15 minutes.
Step 3
Mix the brown butter, brown sugar, and 1/4 sugar. Then add in eggs and 1 tbsp vanilla.
Step 4
Mix together baking soda, salt, and flour and then add to wet ingredients, mixing just until incorporated.
Step 5
Add in 3/4 cups of chopped chocolate and 3/4 cup toffee (break it into pieces first)
Step 6
Let the dough refrigerate for at least two hours, or overnight if possible.
Step 7
Line a cookie sheet with parchment paper and make cookie sized balls out of the dough. Top each one with a few pieces of chocolate and toffee. Bake for ten minutes at 350 degrees. Remove from oven and sprinkle with flakey salt, then let cook.
