Step 1
1. Preheat oven to 425 degrees.

2. Season clean chicken thighs on both sides with Spicelopedia’s Chili Lime Adobo Seasoning, garlic powder and salt.

3. In a cast iron skillet, sear chicken skin side down over medium high heat. Flip and sear on the other side. Remove from the stove.

4. Place cast iron skillet into oven and bake until chicken reaches an internal temperature of 165 degrees.

5. In another skillet, add pineapple juice, tequila and honey and bring to a boil. Allow to boil and reduce for 5-7 minutes.
Step 6
6. Combine cornstarch and water in a small bowl, and stir well. Add cornstarch mixture to the skillet, stirring constantly as mixture thickens. Bring to a boil, and cook for 1 minute, stirring constantly. Remove from heat, and stir in lime zest , lime juice, and crushed red pepper.
Step 7
7. Pour glaze over chicken and garnish with lime slices.
