This recipe has evolved over time for me. I've never claimed to be a cook but everyone that's eaten this always comes back for more. It's really a simple dish that the whole family can enjoy. It's also a good way to get your children to eat vegetables. This recipe is very yielding. You can change the vegetables or leave out the eggs. You may want to add an egg. Whatever your taste buds are craving then you can pretty much throw it in as long as it goes with the chicken. I hope you enjoy.

Ingredients

"For the Chicken" The chicken is much easier to cut if it's been frozen and about 3/4 thawed. Cut cubes whatever size you would prefer.
"For the Rice". Please disregard the instructions on the box.
2 boxesChicken Flavor
or Chicken Fried Rice Flavor

1 x 12 ozfrozen mixed vegetables
or 1 can

2eggs
large

5 heaping tblsbutter

1 tblscooking oil

5 cupswater

1 packetseasoning
Instructions
Step 1
In small frying pan use cooking oil on medium heat to fry your cubed chicken. Cook until lightly browned on all sides. Set aside.
Step 2
In a large deep frying pan heat butter on medium until melted.
Step 3
Add rice. Cover your pan with the rice then stir. If it starts to clump just break it up. Once all the butter is absorbed continue cooking until your rice starts to turn brown.
Step 4
Once your rice is starting to turn brown, break your eggs into the rice. Stir vigorously so that your eggs stay soft yet cooked. Stir as if you wanted them scrambled trying to get your eggs throughout the rice. Continue cooking rice until it gets to a nice dark brown.
Step 5
If your rice is a good darkened brown (not burnt) add 2 cups water and stir well. As it thickens, add 2 more cups and continue stirring and add the last cup of water. Make sure the rice isn't sticking and its cooking with a slight boil.
Step 6
Now add seasoning packet stir well to mix it fully through the rice.
Step 7
Add chicken and blend it in with the rice.
Step 8
Add mixed vegetables and blend well.
Step 9
After all your ingredients are mixed together, reduce the temperature and simmer for 20 minutes.
