Start by removing the steak from the fridge at least 30 minutes before cooking and preheat your oven to 210ºC on broil

To make the chimichurri, chop the coriander, onion and garlic and add them to a bowl. Add the olive oil and the juice of 1 lime to the bowl along with salt and pepper to taste.

Next make the truffle mayo, by combining the mayonnaise, truffle oil and black pepper into a bowl

Next, begin cooking the steak. First, generously salt all sides of the steak then immediately place into a very hot oiled pan. Sear on both sides for around 2-3 minutes per side but it depends on the thickness of the steak.

Once cooked remove the steak from the pan and let it rest for at least 5-10 minutes

Keep the pan on heat after you remove the steak in order to make the pan sauce. Start by deglazing the pan with 0.5 cups of white wine and scrape the bottom of the pan. Then add the mustard and mix well and reduce the heat to low. Add the double cream, butter and freshly cracked black pepper. Finally, add any juices from the steak into the sauce and mix.

Once the cheese is melted, you are ready to assemble the sandwich. First spread the truffle mayo on both sides of the bread. (over the cheese)

Next place the steak sliced into very thin strips on top. Followed by the pan sauce and the chimichurri.

Finally, top the sandwich with the other slice of bread and it is ready
