Instructions

Step 1
Get the chicken ready: Season both sides of the chicken breasts with salt, pepper, and paprika. In a large skillet, heat the olive oil over medium-high heat. Sear the chicken till golden brown, 3–4 minutes per side. Take out and put aside.
Step 2
Cook the Vegetables: Add the chopped onion to the same skillet and cook it for two to three minutes, or until it becomes transparent. Cook the sliced mushrooms and minced garlic for a further three to four minutes, or until they are tender.
Step 3
To make the sauce: Sprinkle the flour on top of the veggies, stir to mix, and heat for one to two minutes to eliminate the taste of the raw flour. Sprinkle the flour on top of the veggies, stir to mix, and heat for one to two minutes to eliminate the taste of the raw flour. To prevent lumps, add the white wine (or broth) gradually while stirring continuously. Add the bay leaf, thyme, heavy cream, and chicken broth. Heat to a low simmer.
Step 4
Simmer and Combine: Put the chicken back in the skillet and tuck it into the sauce. The chicken should be cooked through and the sauce thickened after 15 to 20 minutes of simmering under cover.
Step 5
Serve: Remove and discard the bay leaf before garnishing and serving. Add some freshly cut parsley as a garnish. Serve hot over spaghetti, rice, or mashed potatoes.
