For the mashed potatoes
Step 1
Peel as much skin off the potatoes as you’d like. Cut the potatoes into cubes. Bring potatoes to a boil in a large pot. Cook for about 20 minutes. Meanwhile, cut top off of the heads of garlic, peel most of the garlic skin off, drizzle with olive oil, and cover with aluminum foil.
Step 2
Bake the garlic at 425°F for 45 minutes. Drain the potatoes, put them in a large mixing bowl, and mash. Add 1 tsp salt, pepper to taste, almond milk, and butter. Mix together.
Step 3
Top with green onions or chives! The more butter and almond milk, the creamier they become (if your protein tolerance can handle it)!
For the cakes
Step 4
If your potatoes have dried out a bit, add some unflavored almond milk to make them creamier. Form the potatoes into small discs, seasoning each side with salt and pepper.
Step 5
Using a frying pan with your favorite cooking oil on medium heat, place each potato pancake down, allowing each side to cook for 2-3 minutes or until they're golden brown. Then, enjoy!
