Fruit Kebabs with Piña Colada Dip

This easy snack features fresh fruit dunked in an indulgent-tasting yogurt sauce that’s simply made with coconut-flavored yogurt and fresh pineapple. To keep prep simple, we “puree” the pineapple with a knife—no need to pull out a blender or food processor. The recipe makes one serving but is easy to scale up as desired.

Ingredients

1 slicePineapple
a thick ring, cut into 6 equal pieces, divided
¼ cupLow-fat coconut-flavored Greek yogurt

4Fresh blackberries

Instructions
Step 1
Finely chop 2 pineapple chunks; rock your knife back and forth over the pineapple until it reaches a pureed texture. In a small bowl, stir together the pureed pineapple and yogurt.
Step 2
Onto 4 small skewers or long toothpicks, thread the remaining pineapple chunks, blackberries, and strawberries. Serve the fruit kebabs with the dip.
Step 3
Serving size: 4 kebabs and ¼ cup dip
