First of all, I want to tell you that different spellings exist for this dish depending on the regions where it is prepared, such as cebiche, ceviche, sebiche, and seviche. All of these spellings are valid and are registered in the academic dictionary. I'm using 'ceviche' because it is the term we use in Venezuela to refer to this dish, just like in Peru, where it originates from. My husband and I really enjoy ceviche; it's a fresh, citrusy, spicy dish, rich in protein, and vegetables, loaded with vitamins, omega, and antioxidants. The original ceviche is made with white fish, but equally delicious versions can also be made with seafood. One of our favorites is shrimp ceviche. The combination of the right ingredients with perfect textures and flavors makes this ceviche so balanced. It’s something you must try this summer, at any time of day. It’s perfect for a meal, for sharing with friends, or at gatherings.

Instructions

Step 1
Peel and devein the shrimp. Dice them and marinate them with the lime and lemon juice for at least 3 hours. While white fish used in traditional ceviche cooks quickly in the juice, the time may vary with seafood, depending on the type and size, such as the shrimp in this case. Ensure they are fully 'cooked' by monitoring the color change until they turn white.
Step 2
Add the other ingredients except for the cilantro and let them sit with the shrimp and the juice for at least 15 minutes before serving.
Step 3
Garnish with toasted cilantro and season to perfection with salt and pepper.
